Herb & Garlic Green Beans

Skip the green bean casserole and serve this tasty green bean side instead. With this recipe, you’ll enjoy the fresh taste of each green bean, made even better with freshly chopped garlic and thyme. This tasty side also only takes 10 minutes to make.


1 pound of fresh trimmed green beans
2 tablespoons of butter
1 tablespoon of freshly chopped garlic
1 teaspoon of fresh, finely chopped thyme
1 teaspoon lemon juice
About a 1/2 a teaspoon of salt and a 1.8th teaspoon of pepper
1 tablespoon of extra virgin olive oil (or low taste, healthy oil alternative)


Add oil to a large skillet, warm to medium heat, spreading the oil over the base of the skillet.
Add the green beans and a 1/4 cup of water.
Cover and cook for approximately 8 minutes, or until most of the water has evaporated and the green beans soften.
Add the butter, salt and pepper and cook, while stirring for about 5 minutes.
Add the thyme, garlic, and lemon juice.
Cook, stirring occasionally until the green beans are tender and the garlic and thyme are aromatic, approximately 3 minutes.

Makes about 3 to 4 servings so if you’re having several guests over, or just really love green beans, adjust accordingly.
