Refreshing Watermelon Feta Salad


6 cups of cubed watermelon (1-inch pieces)
1/2 to 3/4 cup fresh blueberries
½ cup of fresh mint, finely chopped
6 ounces of feta cheese
Freshly squeezed lime juice (1 large lime)
Freshly ground black pepper


Add ½ cup of blueberries for added antioxidants.
Place the watermelon feta salad on a bed of spinach for more added nutrients.


Place cubed watermelon in a large mixing bowl.
Squeeze the juice from half of a lime onto the watermelon.
Add the freshly ground black pepper to taste.
Rinse the mint sprigs and pat dry. Remove the leaves and finely chop.
Gently toss the lime juice, pepper, and mint with the watermelon.
Place the combination on a good-sized serving platter so that the watermelon can spread out a bit.
Evenly sprinkle the crumbled feta over the watermelon.
Serve and Enjoy!
